Vegetarian Pad Thai

Pad Thai

This meal will take you about 20 minutes to make.

Here is the ingredients:

1 – 3 Tablespoon of Sriracha (Depending the Spice Level)

1 Teaspoon of Fish Sauce (This is stinky stuff so I never use too much)

1 Cup of Veggie Broth or Chicken Stock

1 Tablespoon (Depending on Sweet Level)

1 Teaspoon of Rice Vinegar

2 Tablespoons of Soy Sauce

Half an Onion

Cilantro

Ginger

Peanuts

Lime

Now this dish can have variations to how you like it. Whether you like it more spicy or sweet, add more Sriracha or Brown Sugar. Go easy on the Peanut Butter since its so powerful it might dominate your dish, which isn’t always a bad thing.

  1. Start to cook the Pad Thai noodles as directed on the package. Start my boiling a pot of water, remove from heat, add noodles then let simmer for 2 to 3 minutes. These noodles cook quick so if you want the noodles to be firm don’t cook as long, depending if you want the sauce on the side.
  2. Saute in a frying pan half onion, garlic and ginger for 5 minutes. Then add the rest of the ingredients.
  3.  Once you have all ingredients at a boil and wish to thicken it, you can mix flour and water into a small separate bowl and slowly add to the sauce while its boiling and stir constantly until desired consistency.

 

Once the noodles are done and the sauce is at your liking, add cilantro, crushed peanuts and a squeeze of lime.
